CHAPTER EIGHTEEN

The Chicken Crisis

MY FIRST REAL brush with Raising Cane’s was freshman year of high school, seventh period, first day. The teacher asked us all our favorite food spots, and suddenly it was a Cane’s cult meeting. Everyone swore it was the greatest thing on Earth. I was like, “What are you people talking about?”

Because see, I liked Lee’s. I knew Lee’s Famous Recipe Chicken. I was raised on it. Giant, juicy tenders. Breading sent straight from the heavens. Sides that made you feel like you were at a family reunion. The whole place had that golden-hour warmth to it. I loved walking in as a kid, it felt like comfort in a cardboard box.

And then came Cane’s. Modern. Sleek. Scammy? Maybe. I’ll say it: Cane’s chicken is fine. It’s above average. But let’s not pretend it’s holy. It used to be bigger, I swear. Over time, the tenders shrunk, the prices didn’t, and variety? That’s a myth. You get chicken. Toast. Slaw. Fries. That’s it.

Oh, and of course, the sauce. The sacred Cane’s Sauce. The actual reason anyone goes. That’s their whole economy. That’s the glue. That’s the religion. If Cane’s sauce is part of your personality... I just want you to take a long, hard look in the mirror. I’m not judging. I’m just saying that there’s life beyond condiments.

Then there’s Popeyes. Legendary for the spicy chicken sandwich. Hit or miss on everything else. You don’t go there for consistency, you go there for the idea of Popeyes. And maybe biscuits that will either save your soul or dry your throat into a chalk cube.

KFC? It’s solid. It’s reliable. Famous bowls are fire. Corn, cheese, mashed potatoes, crispy nuggets, what’s not to love? The secret herbs and spices? They’re cool. But just because there’s eleven of them doesn’t mean they’re the right eleven.

And if we’re being real, bone-in chicken is too much work for too little meat. Tenders are the future. The past. The now.

And Lee’s? Lee’s is the king. But if you try to go there on a Wednesday... God help you. Dinner special day. Cars stretching into the road like it's a concert. Shared turn lane becomes a war zone. And yet... worth it. Every time.

This was supposed to be a Raising Cane’s chapter. But turns out, chicken is emotional. And Cane’s might have the sauce, but Lee’s? Lee’s has the soul.
